Salmon Sliders with Garlic Aioli
  • 2 lbs salmon fresh, not farmed and skin off, diced into small pieces
  • 1/4 cup dry bread crumbs (can substitute gluten free)
  • 1 bunch green onions thinly sliced
  • 1 tsp kosher salt
  • 1 egg whisked
  • 1 tbs fresh finely chopped dill
  • 1/2 cup red bell pepper (can use yellow, orange or green)
  • 1 tbs finely chopped cilantro
  • Fresh arugula, washed and dried
  • 1 package rolls (I use Hawaiian but any mini rolls would work)
  • 1 garlic cove mashed
  • 1/4 tsp salt
  • 1/2 cup mayo (I use mayo that is olive oil or avocado oil based)
  • 1 tbs fresh squeezed lemon juice

Salmon Cakes
  1. Clean and slice salmon into small chunks and put in food processor or blender
  2. Whisk egg and put in blender with salmon (depending on your blender or processor this may take more than one time to puree correctly)
  3. Once all the salmon is pureed with the egg mixture add in bread crumbs, green onions, salt, fresh dill, diced bell pepper and cilantro
  4. Mix well with your hands or a large spoon
  5. Next make salmon into 1 inch balls then flatten out to fit the size of your bun
  6. This should make24 1 inch balls depending on the size of the patty
  7. Heat olive oil in a skillet and brown patties on both sides until cooked through
Garlic Aioli
  1. Mash 1 clove of garlic and mix with 1/4 tsp salt, 1/2 cup mayo, 2 tbs olive oil and 1 tbs lemon juice
  2. Mix well together till you have the desired consistency (I also buy pre made store bought garlic aioli from a local fish market). Either will work.
To Assemble The Sliders
  1. Layer the bottom of your slider with garlic aioli, arugula, salmon cake, a bit more aioli and then brush the tops of the sliders with a bit of butter and salt
  2. Put in the oven at 350' for about 10 minutes or until completely warmed through and enjoy!

The salmon cakes can be made ahead of time and assembled when needed.
